I currently have an abundance of lemons on my little old tree. And what better thing to make with them than an NO BAKE slice.
Quick and easy and with minimal ingredients, this is a great little treat for lunchboxes or with a morning cuppa. The best part is no baking, so great for warmer weather when you don’t want the kitchen to get hot.
This is one of my favorite slices to make and you can easily adjust the amount of lemony tang depending on your preference. I always add a little extra to the base and icing as I LOVE LEMON!
Gather your ingredients and you need to first blitz the biscuits into crumbs for the base. I use a little stick mixer that came with a base but you could also do it the old fashion way like my Gran with a freezer bag and rolling pin.
I like the crumbs to have some chunks in it but you can also blitz until powder-like if you don’t like chunky bits.
Then take your condensed milk (and the good news is you don’t use the whole can, so you have my full approval to grab a spoon and eat the leftovers!) and butter and melt together. Watch this though as you don’t want it to burn and turn into caramel.
Measure out the rest of the ingredients and add to biscuit crumbs and pour in the melted condensed milk and butter.
Mix until all combined and add a couple of tablespoons of lemon juice now if you want it a bit tangy.
Grease your slice pan (I just use spray canola oil) and you can line with baking paper or foil but I have never bothered with it as it comes out easily once firm and cut.
Tip crumb mix into the base and spread with the back of a spoon, making sure to press into corners. Keep pressing until level and firm.
Pop in the fridge to firm up while you make the icing. Once again adjust according to your lemon liking and combine all ingredients and spread over the top of the slice.
You can pop back in the fridge to firm up again, however, if you are anything like my family you will cut it up and eat it right away!
